Antipasto Salad with Fresh Basil Vinaigrette
A hearty pasta salad layered with Italian meats, cheeses, and vibrant Mediterranean flavors.

This antipasto salad is a colorful, flavor-packed twist on the classic Italian starter, bringing together tender pasta, savory cured meats, sharp cheeses, and briny vegetables. Finished with a bright, herb-forward basil vinaigrette, it works as both a side dish and a light main course.
Ingredients
For the Red Wine Basil Vinaigrette:
1 bunch fresh basil, stemmed and leaves chopped (about 2 cups)
1/4 cup red wine vinegar
1 garlic clove
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup extra-virgin olive oil
For the Antipasto Salad:
1 pound fusilli pasta
1/2 cup hard salami, cut into strips (about 3 ounces)
1/2 cup smoked turkey, cut into strips (about 3 ounces)
1/4 cup provolone cheese, cut into strips
1/4 cup grated Asiago cheese
2 tablespoons green olives, halved and pitted
2 tablespoons roasted red peppers, cut into strips
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions
1. Make the vinaigrette:
Place basil, vinegar, garlic, mustard, salt, and pepper in a blender. Blend until the basil is finely chopped. With the blender running, slowly drizzle in olive oil until the dressing is smooth and emulsified.
2. Cook the pasta:
Bring a large pot of salted water to a boil. Add fusilli and cook until tender but still firm to the bite, about 8–10 minutes. Drain and cool slightly.
3. Assemble the salad:
In a large mixing bowl, combine pasta, salami, smoked turkey, provolone, Asiago, olives, and roasted red peppers. Sprinkle with salt and pepper. Drizzle with basil vinaigrette and toss until evenly coated.
4. Serve:
Enjoy immediately, or chill for 30 minutes to let the flavors meld.
