Ingredients

  • 1 (10-ounce) log goat cheese, at room temperature

  • 4 ounces cream cheese, at room temperature

  • 1/4 cup grated parmesan cheese

  • 1/4 cup extra-virgin olive oil, divided, plus more for brushing

  • Freshly ground black pepper, to taste

  • 8 small cocktail tomatoes (about 10 ounces), quartered

  • 2 tablespoons chopped fresh chives

  • 2 teaspoons balsamic vinegar

  • 1 clove garlic, finely chopped

  • Kosher salt, to taste

  • Toasted baguette slices, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a food processor, combine the goat cheese, cream cheese, parmesan, and 2 tablespoons of olive oil. Add freshly ground black pepper and blend until smooth and creamy.

  3. Brush a 1-quart baking dish lightly with olive oil. Spread the cheese mixture into the dish, shaping it so it’s slightly mounded around the edges and a little lower in the center (this helps hold the topping later).

  4. Bake for about 15 minutes, or until golden and heated through.

  5. While the cheese bakes, prepare the tomato topping. In a bowl, toss together the quartered cocktail tomatoes, chives, balsamic vinegar, garlic, remaining 2 tablespoons of olive oil, and 1/2 teaspoon kosher salt.

  6. Spoon the tomato mixture over the warm dip just before serving. Pair with toasted baguette slices or your favorite crackers.

Tips & Variations

  • Make it ahead: You can prep the cheese base a day in advance and refrigerate it. Let it sit at room temperature for 30 minutes before baking.

  • Add a kick: Mix in a pinch of red pepper flakes or a drizzle of hot honey over the top.

  • Make it gluten-free: Swap the baguette for gluten-free crackers or veggie sticks.

With its bold flavor and rustic charm, this baked goat cheese dip is an instant appetizer upgrade no complicated prep or cooking skills needed.
