How to Make It
1. Prep the Ingredients:
Clean the mushrooms with a damp towel and slice them. Chop the chicken into bite-sized pieces. Dice the bell pepper, chop the water chestnuts, and slice the scallions. Zest the orange and cut it into wedges.
2. Stir-Fry the Chicken and Veggies:
Heat a large skillet or wok over high heat. Add the oil.
Add chicken and stir-fry for 1–2 minutes until it starts to brown.
Toss in mushrooms and cook for another 1–2 minutes.
