Ingredients You’ll Need

  • 2 cups (about 4 handfuls) fresh shiitake mushrooms, stems removed and sliced

  • 1 1/3 to 1 1/2 pounds thin-cut chicken breast or chicken tenders, chopped into small pieces

  • 2 tablespoons light oil (vegetable or peanut oil work well)

  • Coarse salt and black pepper, to taste

  • 3 cloves garlic, chopped

  • 1 inch fresh ginger, finely chopped or grated (optional)

  • Zest of 1 orange

  • 1/2 red bell pepper, finely diced

  • 1 small can (6–8 oz) sliced water chestnuts, drained and chopped

  • 3 scallions, chopped

  • 3 tablespoons hoisin sauce (Chinese barbecue sauce, available in most grocery store Asian aisles)

  • 1/2 large head of iceberg lettuce, core removed and quartered

  • Navel orange wedges (for garnish and extra zing)

How to Make It

1. Prep the Ingredients:

Clean the mushrooms with a damp towel and slice them. Chop the chicken into bite-sized pieces. Dice the bell pepper, chop the water chestnuts, and slice the scallions. Zest the orange and cut it into wedges.

2. Stir-Fry the Chicken and Veggies:

  • Heat a large skillet or wok over high heat. Add the oil.

  • Add chicken and stir-fry for 1–2 minutes until it starts to brown.

  • Toss in mushrooms and cook for another 1–2 minutes.

  • Season with salt and pepper, then add garlic and ginger. Stir for about 1 minute.

  • Add orange zest, bell pepper, water chestnuts, and scallions. Continue stir-frying for another minute.

3. Sauce It Up:

  • Add hoisin sauce and toss until everything is evenly coated and glossy.

4. Serve It Fresh:

  • Transfer the hot mixture to a serving platter.

  • Arrange crisp wedges of iceberg lettuce on the side along with orange wedges.

  • To eat, scoop the filling into lettuce leaves, wrap, and squeeze a wedge of orange over for a bright citrus finish.

Why You’ll Love It

  • Low-carb and high-protein: Great for those looking to cut down on refined carbs without sacrificing flavor.

  • Quick to prepare: Ready in under 30 minutes, with just one skillet to clean.

  • Customizable: Add shredded carrots, chopped peanuts, or a splash of rice vinegar for extra crunch and zing.

  • Family-friendly: Fun for kids to wrap and eat, and easy to scale for larger groups.

According to USDA data, iceberg lettuce is 95% water making it a hydrating and refreshing vessel for this protein-packed filling. And hoisin sauce, while flavorful, is relatively low in fat compared to many creamy dressings or sauces, making it a satisfying yet lighter choice.
