In a mixing bowl, combine the roasted semolina, curd, and 1 cup of water. Add salt to taste and whisk until the batter is smooth. Let it sit for 10 minutes to thicken.

Step 2: Make Beetroot Paste

Peel and chop the beetroot into small pieces. Blend them into a smooth paste using a blender.

Step 3: Add Beetroot to the Batter

Mix the beetroot paste into the semolina batter. If the mixture feels too thick, add 1/4 cup of water to adjust the consistency to your liking. The batter should be thick but pourable.

Step 4: Steam the Idlis

Grease the idli moulds with oil to prevent sticking. Pour the batter into the moulds, filling them about 3/4 full. Place the moulds in a steamer or pressure cooker (without the whistle), and steam for 12-14 minutes.

Step 5: Serve and Enjoy

Once the idlis are steamed and fluffy, carefully remove them from the moulds. Serve your vibrant beetroot idlis with coconut chutney and sambhar for a wholesome and satisfying meal.
