1 large egg
1 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract

1/3 cup skin-on sliced almonds
1/3 cup old-fashioned rolled oats
2 tablespoons light brown sugar
1 tablespoon unsalted butter, melted
1 tablespoon whole-wheat pastry flour (or unbleached all-purpose flour)
1/2 teaspoon pure vanilla extract
1/4 teaspoon ground cinnamon
1/8 teaspoon kosher salt
12 ounces frozen mixed berries, thawed (yields about 1 1/2 cups thawed)
Optional Garnish
6 tablespoons 2-percent plain Greek yogurt
Directions
1. Preheat and Prepare the Dish
Preheat your oven to 350°F. Grease a 2-quart baking dish or an 8-inch square baking pan with nonstick cooking spray.
2. Mix the Oatmeal Base
In a large bowl, combine the oats, brown sugar, and salt. In a separate medium bowl, whisk together the almond milk, egg, vanilla, and almond extracts. Pour the wet ingredients into the oat mixture, stirring well to combine.
3. Make the Topping
In a medium bowl, mix the almonds, oats, brown sugar, melted butter, flour, vanilla, cinnamon, and salt. Stir until evenly combined.
4. Assemble the Bake
Pour the oatmeal mixture into the prepared baking dish, spreading it evenly. Scatter the thawed berries (including any juices) over the oatmeal. Sprinkle the almond-oat topping evenly over the berries.
5. Bake and Cool
Bake for about 50 minutes, or until the bake is lightly browned and set. Let it cool on a rack for 10–15 minutes before serving.
