Ingredients
10 slices bacon, finely chopped
2 medium onions, chopped (about 2 ½ cups)
6 garlic cloves, pressed
1 (14.5-ounce) can reduced-sodium chicken broth
1 ½ cups canned chopped tomatoes
2 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 tablespoon chili powder
4 (15.5-ounce) cans black beans, drained but not rinsed
Kosher salt and freshly ground black pepper, to taste
1 bunch cilantro
Juice of ½ lime
For garnish
Thinly sliced scallions
Sour cream
Grated cheddar
Directions
In a large heavy-bottomed pot over medium heat, add the chopped bacon. Cook for about 4 minutes until the fat begins to render.
Stir in the chopped onions and cook, stirring occasionally, for another 4 minutes, until translucent.
Add the garlic and cook for 1 minute more, just until fragrant.
Stir in the chicken broth, tomatoes, ketchup, Worcestershire sauce, and chili powder. Mix well.
Add the black beans, raise the heat to high, and bring the soup to a boil.
Once boiling, reduce to a gentle simmer and cook for 10 minutes, uncovered. Season with salt and pepper.
While the soup simmers, rinse and roughly chop the cilantro, removing thick stems.
Stir in the cilantro after the 10-minute mark, then continue simmering the soup for 5 more minutes, until it thickens slightly.
Finish with the lime juice and give it a final stir.
Serve hot with your choice of garnishes like scallions, sour cream, and cheddar cheese.
