Why You'll Love This Recipe
The combination of earthy mushrooms, herb-infused aromatics, and melting Brie encased in flaky pastry offers both comfort and sophistication. It makes a beautiful centerpiece for brunches, holiday spreads, or intimate gatherings. Plus, it can be prepped ahead and baked just before serving.
Ingredients You’ll Need
1 tablespoon olive oil
1 tablespoon butter
1/4 cup diced onion
1 tablespoon minced fresh rosemary, plus sprigs for garnish
2 teaspoons minced fresh thyme
2 cloves garlic, minced
1/2 pound cremini mushrooms, sliced
Kosher salt and freshly ground black pepper
1/2 cup red wine (Cabernet or similar dry red)
1 large egg
1 sheet frozen puff pastry, thawed
All-purpose flour, for dusting
One 8-ounce wheel of Brie
Dried cranberries, for garnish
How to Make Brie and Mushrooms en Croute
1. Preheat and Prep
Preheat your oven to 375°F. Line a baking sheet with parchment paper for easy cleanup.
2. Sauté the Mushroom Filling
In a large skillet over medium-high heat, melt the butter and olive oil. Add the onion, garlic, rosemary, and thyme and sauté until fragrant. Add the mushrooms and cook until golden about 5 minutes. Season with salt and pepper, then pour in the red wine to deglaze the pan. Simmer until most of the liquid has evaporated. Set aside to cool slightly.
3. Assemble the Pastry
Lightly flour your work surface and roll out the puff pastry sheet.
Pile the mushroom mixture in the center, then place the Brie wheel on top.
Fold the pastry edges over the cheese and mushrooms to fully enclose, trimming excess if needed.
Flip the bundle seam-side down onto your prepared baking sheet.
4. Bake to Perfection
In a small bowl, beat the egg with a tablespoon of cold water to create an egg wash. Brush the pastry with the wash to promote golden browning.
Bake for 30–35 minutes, or until the pastry is crisp and deeply golden. Allow it to rest for 5–10 minutes before serving.
5. Garnish and Serve
Top with fresh rosemary sprigs and a handful of dried cranberries to mimic the look of a holiday wreath. Serve warm with sliced baguette, crackers, or apple wedges.
Tips for Success
Don’t skip the wine: It adds depth to the mushroom filling. If avoiding alcohol, use a splash of balsamic vinegar or pomegranate juice for acidity.
Room-temperature Brie melts better, so let it sit out while you prep the mushrooms.
Make it ahead: Assemble the pastry and refrigerate for up to 4 hours before baking.
Nutrition Spotlight
Brie cheese is a good source of calcium and vitamin B12, while mushrooms add selenium, potassium, and fiber. While this dish is rich, pairing it with fresh fruit or leafy greens can help create a more balanced plate.
