Ingredients
For the Chicken Balls:
- 1 store-bought rotisserie chicken, meat picked and shredded (discard the skin) 
- 1/4 cup hot sauce (Frank’s Red Hot recommended) 
- 1 teaspoon ground black pepper 
- 1 3/4 cups sharp cheddar cheese, shredded 
- 1/4 cup freshly sliced scallions 
- 1 cup all-purpose flour 
- 3 eggs, lightly beaten 
- 2 cups panko breadcrumbs 
- Vegetable oil, for frying 
For the Blue Cheese Dip:
- 1 1/2 cups mayonnaise 
- 1/2 cup blue cheese, crumbled 
- 1/2 teaspoon hot sauce 
- 2 teaspoons Worcestershire sauce 
- 1 teaspoon salt 
- Juice of 1/2 lemon 
- 1 teaspoon chopped garlic 
Directions
- Prep the Chicken Mixture: - In a large bowl, combine shredded rotisserie chicken, hot sauce, pepper, cheddar cheese, and scallions. Mix well. 
- Roll the mixture into golf ball-sized portions (about 2 ounces each) and set aside. 
 
- Coat and Bread: - Prepare a breading station with three shallow bowls: one with flour, one with the beaten eggs, and one with panko breadcrumbs. 
- Roll each chicken ball in flour, then egg, then breadcrumbs. Press gently to ensure they’re evenly coated. 
 
- Fry the Balls: - Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F. 
- Working in batches, fry the chicken balls for about 2 minutes, or until golden brown and crisp. 
- Remove with a slotted spoon and transfer to a paper towel-lined plate to drain. 
 
- Make the Blue Cheese Dip: - In a bowl, mix mayonnaise, blue cheese, hot sauce, Worcestershire sauce, salt, lemon juice, and garlic. 
- Stir until smooth, taste, and adjust seasoning as needed. 
 
- Serve and Enjoy: - Plate the crispy chicken balls with a side of cool blue cheese dip and watch them disappear.

- Use gloves when forming the balls if the mixture is sticky. 
- Freeze the formed chicken balls for 10–15 minutes before breading for easier handling.
