1 pound large shrimp, peeled and deveined (tails on or off)
Kosher salt and freshly ground black pepper
4 plum tomatoes, chopped
2 bunches scallions, chopped
3 cups cooked white rice
3 tablespoons fresh parsley, chopped
Lemon wedges, for serving (optional)
How to Make It
Sauté the aromatics
In a large skillet, heat the butter, olive oil, and garlic over medium-high heat until fragrant (about 1 minute).Cook the shrimp
Add the Cajun seasoning and shrimp to the skillet. Cook, stirring frequently, until the shrimp just begin to curl about 1 minute. Season lightly with salt and pepper.Add veggies
Stir in the chopped tomatoes and scallions. Cook for another minute to soften them slightly.Finish with rice
Add the cooked rice and ¼ cup water to the skillet. Stir everything together and continue cooking until the rice is hot and the shrimp are fully cooked (about 3 minutes).Garnish and serve
Remove from heat, stir in the chopped parsley, and serve with lemon wedges if desired.
