It’s light, bright, and tossed in a lemony vinaigrette that brings out the natural sweetness of the veggies. Plus, it only takes a few minutes to pull together and goes with just about everything.
Whether you’re topping off burgers, stuffing tacos, or looking for a vibrant side dish, this salad delivers that satisfying, crisp texture you crave with none of the fuss.
Why You'll Love This Carrot and Cabbage Salad
Quick and easy: Made in just one jar, no bowl required
Naturally sweet and tangy: Honey and Dijon mustard balance the lemony dressing
Versatile: Great as a side, topping, or wrap filling
Nutrition-packed: Cabbage is full of vitamin K, fiber, and antioxidants; carrots provide beta-carotene and vitamin A
Ingredients
2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
2 tablespoons fresh chives, thinly sliced
1 tablespoon honey
1½ teaspoons Dijon mustard
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
5 cups loosely packed shredded green cabbage
1 large carrot, grated or shaved into ribbons (about 1 heaping cup)
Directions
In a quart-size Mason jar, combine:
2 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons chives
1 tablespoon honey
1½ teaspoons Dijon mustard
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon pepper
Secure the lid and shake vigorously until the vinaigrette is fully emulsified, about 10 seconds.
Add 4 cups of the cabbage to the jar, cover, and shake again until the cabbage softens slightly about two-thirds of its original volume.
Add the grated or shaved carrot and remaining 1 cup of cabbage. Shake to mix, about 30 seconds more.
Serve immediately, or refrigerate for up to 2 days for a slightly more marinated flavor.
