Melted Cheese Arepas Recipe
Crispy on the outside, melty on the inside these golden cornmeal pockets are a Latin American comfort classic.

Cheese-stuffed arepas are the kind of simple, soul-satisfying dish that brings people together crispy, golden cornmeal patties with gooey mozzarella centers that stretch with every bite. Originating in Venezuela and Colombia, arepas are made with just a few pantry staples and can be enjoyed as a snack, side, or main course.
This version is filled with creamy part-skim mozzarella, pan-fried until golden, then baked to finish. Here’s how to make them step by step.
Ingredients
Kosher salt
2 cups pre-cooked white cornmeal (such as P.A.N.)
4 ounces part-skim mozzarella, cut into 8 cubes
¼ cup vegetable oil, or as needed
Instructions
1. Prepare the Dough
Preheat your oven to 350°F and position a rack in the center.
In a large bowl, stir together 2½ cups lukewarm water and 1½ teaspoons kosher salt.
Gradually add the cornmeal, mixing with your hands until a soft, moist dough forms. Let it rest for about 5 minutes to fully hydrate.
2. Shape the Arepas
Divide the dough into 8 equal balls (about the size of a golf ball).
Flatten each into a 5-inch-wide, ¼-inch-thick patty.
Place a cube of mozzarella in the center of each, fold the dough over the cheese, and seal tightly.
Pat each one back down into a 3-inch-wide, ½-inch-thick disc, making sure no cheese is exposed.
3. Pan-Fry the Arepas
Heat the vegetable oil in a large skillet over medium-low heat until shimmering.
Working in batches, cook the arepas for about 5 minutes per side, or until golden brown. Make sure the oil is hot for each batch to ensure a good sear.
4. Bake for a Perfect Finish
Transfer the cooked arepas to a cooling rack set on a rimmed baking sheet.
Bake for 10 minutes, or until the edges are crisp and the cheese is fully melted inside.
Cook’s Note
Not in the mood for cheese? You can make plain arepas and stuff them after cooking with fillings like shredded beef, pulled pork, avocado and beans, or grilled vegetables.
To do this:
Form 3-inch-wide, ½-inch-thick patties and cook as directed.
Once slightly cooled, slice a third of the way through each arepa using a thin serrated knife, then gently open the center to create a pocket.
Stuff with your favorite ingredients.
Be sure to wipe the knife clean between cuts to avoid sticking.
