Easy Chicken Fajita Tortilla Soup Recipe for a Hearty Meal

A spicy, comforting twist on classic tortilla soup.

If you love the smoky, bold flavors of chicken fajitas, this tortilla soup will quickly become a favorite. Packed with fire-roasted tomatoes, fresh peppers, and tender chicken, this one-pot meal is the perfect blend of spice, crunch, and creamy avocado goodness.

Ingredients

  • 2 tablespoons extra-virgin olive oil

  • 1 ½ to 2 pounds chicken tenders

  • 1 tablespoon ground coriander

  • 2 tablespoons chopped fresh thyme (about 5 to 6 sprigs)

  • Salt and freshly ground black pepper, to taste

  • 1 large onion, quartered and thinly sliced

  • 1 large bell pepper, quartered and thinly sliced

  • 1 jalapeño, seeded and thinly sliced

  • One 28-ounce can fire-roasted diced tomatoes

  • 1 quart chicken stock

  • 1 bag white corn tortilla chips

  • 1 cup shredded Pepper Jack or sharp white Cheddar cheese

  • 1 ripe avocado, diced

  • 1 lime, juiced

  • 4 scallions, chopped

  • Handful fresh cilantro or flat-leaf parsley, chopped

Instructions

  1. Cook the chicken: Heat a large skillet over medium-high heat and add the olive oil. Once hot, add the chicken and cook for about 4 minutes until lightly browned.

  2. Add seasoning and veggies: Stir in the coriander, thyme, salt, and pepper. Then, add the onion, bell pepper, and jalapeño. Cook for 8 to 10 minutes, stirring often, until the vegetables soften.

  3. Simmer the soup: Pour in the fire-roasted tomatoes and chicken stock. Stir well and let the soup heat through. Reduce heat to low and let it simmer while preparing the toppings.

  4. Prepare the toppings: Lightly crush a handful of tortilla chips and divide them among four bowls. Sprinkle some shredded cheese on top. In a small bowl, toss the diced avocado with lime juice.

  5. Assemble and serve: Ladle the hot soup over the tortilla chips in each bowl. Garnish with avocado, scallions, and fresh cilantro or parsley. Serve immediately and enjoy!

Tips for the Best Tortilla Soup

  • Use rotisserie chicken: If you're short on time, swap the raw chicken for shredded rotisserie chicken and reduce the cooking time.
