Ingredients
For the Mashed Potatoes:
1 ½ pounds russet potatoes, peeled and diced
¼ cup half-and-half
2 ounces unsalted butter

1 egg yolk
For the Meat Filling:
2 tablespoons canola oil
1 cup chopped onion
2 carrots, peeled and diced small
2 cloves garlic, minced
1 ½ pounds ground lamb
1 teaspoon kosher salt
½ teaspoon black pepper
2 tablespoons all-purpose flour
2 teaspoons tomato paste
1 cup chicken broth
1 teaspoon Worcestershire sauce
2 teaspoons fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
½ cup fresh or frozen corn
½ cup fresh or frozen peas
Instructions
Step 1: Prepare the Mashed Potatoes
Place the diced potatoes in a saucepan and cover with cold water.
Bring to a boil over high heat, then reduce heat and simmer until tender (10-15 minutes).
In a microwave-safe dish, heat the half-and-half and butter until warm (about 35 seconds).
Drain the potatoes, return them to the pan, and mash until smooth.
Stir in the warmed half-and-half, butter, salt, pepper, and egg yolk until fully combined.
Step 2: Cook the Meat Filling
Preheat the oven to 400°F.
Heat canola oil in a large pan over medium-high heat.
Add onion and carrots, sautéing for 3-4 minutes until slightly caramelized.
Stir in the garlic, then add the ground lamb, salt, and pepper. Cook until browned (about 3 minutes).
Sprinkle flour over the meat, stirring to coat. Cook for 1 more minute.
Mix in the tomato paste, chicken broth, Worcestershire sauce, rosemary, and thyme.
Bring to a boil, then lower the heat and let it simmer for 10-12 minutes until slightly thickened.
Stir in the corn and peas, then remove from heat.
Step 3: Assemble and Bake
Transfer the meat filling into an 11x7-inch baking dish, spreading it evenly.
Spoon the mashed potatoes on top, starting at the edges to create a seal and prevent bubbling. Smooth the surface with a spatula.
Place the dish on a parchment-lined baking sheet and bake for 25 minutes, or until the potatoes are golden.
Let the pie cool for at least 15 minutes before serving.
