Classic Yorkshire Pudding Recipe

Yorkshire pudding is a beloved British side dish that transforms simple ingredients eggs, flour, milk, and beef drippings into a golden, puffed delight. Traditionally served alongside roast beef, it's designed to soak up all the savory juices from the main dish, adding rich texture and flavor to your plate.

Ingredients
¾ cup all-purpose flour
½ teaspoon salt
3 large eggs
¾ cup milk
½ cup pan drippings from roast prime rib of beef
Instructions
Preheat the oven to 450°F (232°C).
In a medium bowl, sift together the flour and salt.
In a separate bowl, beat the eggs and milk until the mixture is light and foamy.
Gently stir the dry ingredients into the wet mixture until just combined don’t overmix.
Pour the pan drippings into a 9-inch pie pan, cast iron skillet, or square baking dish.
Place the pan in the hot oven to heat the drippings until they are smoking hot this step is crucial for the pudding to rise properly.
Carefully remove the hot pan from the oven and immediately pour in the batter.
Return the pan to the oven and bake for 15 to 20 minutes, or until the pudding is puffed up and golden brown with crisp edges.
Serve immediately, preferably with roast beef and gravy.
Pro Tip: Resist the urge to open the oven while the pudding is baking it can cause it to deflate!
Why It Works
The high oven temperature and hot fat create steam quickly, making the batter puff dramatically. The result is a crisp outside and a custardy, tender inside perfect for soaking up savory juices.
