Creamy Baked Macaroni and Cheese

This version uses a blend of Fontina, Parmesan, and mozzarella, adding a flavorful twist to the classic recipe. Ingredients
Pasta and Cheese Mixture
12 ounces wide egg noodles
2 cups heavy cream
2 1/2 cups whole milk
2 teaspoons all-purpose flour
1/2 teaspoon salt, plus extra for the pasta water
1/4 teaspoon freshly ground black pepper
2 cups (packed) grated Fontina cheese, divided
3/4 cup (packed) finely grated Parmesan cheese, divided
3/4 cup (packed) grated mozzarella cheese, divided
Optional Add-Ins
4 ounces cooked ham, diced
2 tablespoons finely chopped fresh Italian parsley

Butter, for greasing the baking dish
Directions
1. Preheat Your Oven
Set your oven to 450°F (232°C).
Grease a 13 x 9-inch glass baking dish with butter and set aside.
2. Cook the Pasta
Bring a large pot of salted water to a boil.
Add the egg noodles and cook until tender but still firm, about 5 minutes.
Drain well, but do not rinse this helps the sauce stick to the pasta.
3. Make the Cheese Sauce
In a large bowl, whisk together:
Heavy cream, whole milk, flour, salt, and pepper until smooth.
Mix in:
1 cup Fontina, 1/2 cup Parmesan, 1/2 cup mozzarella, ham (if using), and parsley.
Combine with pasta:
Add the cooked noodles and toss to coat evenly.
4. Assemble the Dish
Transfer the noodle mixture to the buttered baking dish.
In a small bowl, combine the remaining:
1 cup Fontina, 1/4 cup Parmesan, and 1/4 cup mozzarella.
Sprinkle the cheese mixture evenly over the noodles.
5. Bake to Perfection
Bake until the sauce bubbles and the cheese melts and begins to brown on top, about 20 minutes.
Let the dish stand for 10 minutes before serving this helps set the sauce and makes serving easier.
Tips for the Best Mac and Cheese
For a crispy topping: Add panko breadcrumbs mixed with a little melted butter to the cheese topping before baking.
