Ingredients
For the Cutlets
600g chicken, parboiled and shredded
3 cups mashed potatoes
½ cup finely chopped capsicum (green pepper)
½ cup finely chopped carrot
½ cup finely chopped onion
½ cup finely chopped coriander leaves
1½ tsp cumin seeds
½ tbsp finely chopped garlic
½ tbsp grated ginger
½ tbsp garam masala powder
1 tbsp cumin powder
½ tbsp finely chopped green chili
½ tsp dried oregano
2 tbsp lemon juice
Salt and black pepper to taste
70g breadcrumbs
For Coating
½ cup all-purpose flour
2 eggs, beaten
Additional breadcrumbs for coating
Refined oil for frying
Instructions
Step 1: Prepare the Chicken and Vegetables
Wash the chicken, parboil it until tender, then shred it into small pieces.
Heat 2 tbsp oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped garlic and grated ginger, stirring until golden and aromatic.
Add chopped onions and sauté until they turn translucent.
Toss in carrots and capsicum, cooking for a few minutes until slightly softened. Remove from heat and let the mixture cool.
Step 2: Make the Cutlet Mixture
In a large bowl, combine:
Shredded chicken
Mashed potatoes
Sautéed vegetables
Green chilies, garam masala, cumin powder, oregano, and lemon juice
Breadcrumbs and chopped coriander
Mix everything thoroughly until well combined.
Step 3: Shape and Coat the Cutlets
Divide the mixture into equal portions and shape them into oval or round cutlets.
Coat each cutlet in all-purpose flour, then dip it in the beaten eggs, and roll it in breadcrumbs for a crispy outer layer.
For extra crunch, repeat the egg and breadcrumb coating.
Place the coated cutlets on a tray lined with butter paper and freeze for 3-4 hours to firm up.

Heat oil in a deep pan over medium heat.
