Easy Pantry Pasta

  • 2 to 3 tablespoons jarred pesto

  • 1/2 cup crumbled or fork-chunked feta

  • 3 tablespoons pine nuts, dry-toasted

Instructions

  1. Sauté the aromatics:
    In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté until soft and fragrant, about 3–4 minutes.

  2. Build the sauce:
    Add the canned tomatoes with their juice, chicken stock (or white wine), olives, artichoke hearts, and minced garlic. Season with salt and freshly ground black pepper. Stir to combine, then reduce heat to low and let simmer for 15 minutes, stirring occasionally.

  3. Add the pasta:
    Toss the cooked pasta directly into the skillet. Stir until the noodles are coated with the sauce.

  4. Mix in the pesto and feta:
    Spoon in the pesto and stir gently to distribute. Add in the feta and let it warm slightly without fully melting this keeps the texture rich and creamy.

  5. Finish and serve:
    Top with toasted pine nuts just before serving for a nutty crunch that complements the creamy, briny flavors.
