Healthy and Easy Egg Spinach Salad Recipe

Ingredients
4 eggs
150g small potatoes with skins
1 cup baby spinach
½ cup parmesan cheese
4 cloves garlic, chopped
2 tsp extra virgin olive oil
1 tsp dry red chili flakes
½ tsp black pepper
Salt to taste
2 handfuls coriander leaves, chopped
Water as needed
Instructions
Step 1: Boil the Eggs and Potatoes
In a pan, add water and a pinch of salt.
Place the eggs in the pan and boil until hard-boiled, about 10–12 minutes.
Simultaneously, boil the small potatoes in salted water until tender, then drain and set aside.
Step 2: Sauté the Garlic and Potatoes
Heat olive oil in a pan over medium heat.
Add the chopped garlic and sauté for 1 minute until fragrant.
Add the boiled potatoes and toss until lightly golden.
Step 3: Add Spinach and Spices
Toss in the baby spinach leaves, dry red chili flakes, and black pepper.
Stir gently until the spinach wilts.
Sprinkle the parmesan cheese and toss to combine.
Step 4: Assemble the Salad
Turn off the heat and transfer the sautéed mixture to a serving plate.
Peel and cut the boiled eggs into halves and arrange them on top.
Season with additional salt and pepper to taste.
Garnish with fresh coriander leaves.
