Savory Garlic Home Fries

Ingredients
Kosher salt
2 pounds red bliss or Yukon gold potatoes, peeled and cut into ½-inch cubes
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
½ onion, chopped
½ teaspoon paprika
1 clove garlic
¼ cup fresh parsley
Freshly ground black pepper
Instructions
Boil the Potatoes:
Bring a large pot of salted water to a boil. Add the potatoes, cover, and cook over medium-high heat for about 6 minutes until just tender. Drain and set aside.Crisp Them Up:
In a large cast-iron skillet, heat the butter and olive oil over medium heat. Add the boiled potatoes in a single layer. Let them cook undisturbed for about 5 minutes until the bottom begins to brown.Add Flavor:
Sprinkle in the chopped onion and paprika. Flip the potatoes and cook for another 5 minutes. Stir once, then continue cooking for another 5 minutes until they’re golden and crisp.Make the Garlic Mixture:
While the potatoes cook, finely chop the garlic and parsley together with 1 teaspoon of kosher salt. Mash until the mixture is well minced and aromatic.Finish and Serve:
Toss the garlic-parsley mixture into the skillet and stir to coat the potatoes evenly. Cook for 2 more minutes until heated through. Season with freshly ground black pepper and additional salt to taste.
