Easy Hanky Pankies Recipe for Your Next Party
These savory, cheesy bites are perfect for game days and holiday gatherings.

Hanky pankies are a classic Midwest appetizer that have been delighting party guests for decades. These savory, cheesy bites combine ground beef, sausage, and Velveeta cheese on top of mini rye bread slices, making them perfect for holiday parties, game-day gatherings, and tailgates.
The blend of hearty meat, tangy Worcestershire sauce, and melted cheese creates an irresistible appetizer that's easy to make and even easier to enjoy. Plus, you can prepare them ahead of time and freeze for a stress-free party day.
Ingredients:
1 pound ground beef (80/20)
1 pound hot Italian sausage, casing removed (use sweet Italian sausage for a milder version)
2 scallions, thinly sliced (white and dark-green parts separated)
2 tablespoons Worcestershire sauce
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper, to taste
12 ounces processed block cheese, such as Velveeta, diced
One 12-ounce loaf thinly sliced party/cocktail rye or pumpernickel bread (about 36 mini slices)
Directions:
1. Preheat the Oven
Set your oven to 375°F (190°C) and line 2 baking sheets with parchment paper.
2. Cook the Meat
In a large skillet, combine ground beef and sausage over medium-high heat.
Cook, stirring occasionally, until golden brown and cooked through, about 8 minutes.
Drain excess fat, then return to heat.
3. Add Seasonings and Cheese
Stir in the scallion whites, Worcestershire sauce, oregano, garlic powder, salt, and pepper.
Reduce heat to low, then add the Velveeta, stirring until fully melted and combined.
Taste and adjust seasoning as needed.
4. Assemble and Bake
Spoon about 1 heaping tablespoon of the meat mixture onto each bread slice.
Place the assembled hanky pankies on the prepared baking sheets.
Bake until the bread is lightly toasted and the meat is heated through, about 15 minutes.
5. Garnish and Serve
Top with scallion greens for a fresh touch.
Serve warm and watch them disappear!
Cook's Tip: How to Make Ahead and Freeze
To freeze, assemble the hanky pankies without baking.
Place them on a baking sheet in a single layer and freeze until solid, about 2 to 3 hours.
Transfer to an airtight container or resealable bag and freeze for up to 1 month.
When ready to enjoy, bake from frozen for about 25 minutes.
