Classic Herb-Roasted Turkey Breast Recipe

Ingredients

  • 1 whole bone-in turkey breast (6 ½ to 7 pounds)

  • 1 tablespoon minced garlic (about 3 cloves)

  • 2 teaspoons dry mustard

  • 1 tablespoon chopped fresh rosemary leaves

  • 1 tablespoon chopped fresh sage leaves

  • 1 teaspoon chopped fresh thyme leaves

  • 2 teaspoons kosher salt

  • 1 teaspoon freshly ground black pepper

  • 2 tablespoons freshly squeezed lemon juice

  • 1 cup dry white wine

Instructions

  1. Preheat your oven to 325°F (165°C). Place a rack inside a roasting pan and set the turkey breast, skin side up, on the rack.

  2. Mix the herb paste: In a small bowl, combine the garlic, dry mustard, chopped herbs, salt, pepper, olive oil, and lemon juice until a paste forms.

  3. Apply the paste: Gently loosen the turkey skin with your fingers. Rub half of the herb paste directly onto the meat under the skin. Spread the remaining paste evenly over the outside of the skin.

  4. Add wine to the pan: Pour the white wine into the bottom of the roasting pan to keep the turkey moist and create flavorful pan juices.

  5. Roast: Cook the turkey uncovered for 1¾ to 2 hours, or until an instant-read thermometer inserted into the thickest part of the breast reads 165°F. (Check in multiple spots to ensure it's evenly cooked.) If the skin begins to brown too much before the meat is done, loosely cover with foil.

  6. Rest and serve: Remove the turkey from the oven and loosely tent with foil. Let rest at room temperature for 15 minutes. This allows the juices to redistribute, keeping the meat tender.

  7. Slice and drizzle: Carve the turkey and serve warm with the pan juices spooned over the top.
