Cozy Instant Pot Chicken and Dumplings

2 celery stalks, chopped
2 medium carrots, chopped
2 garlic cloves, minced
1 tablespoon fresh thyme leaves
2 cups chicken stock
½ cup dry white wine
1½ pounds boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup frozen peas
¼ cup chopped fresh parsley
Step 1: Prepare the Dumpling Dough
Start by melting 2 tablespoons of butter.
In a medium bowl, combine:
Baking powder
1¾ cups flour
A pinch of salt
Stir in the milk and melted butter until a soft dough forms. Set the dough aside while preparing the soup base.
Step 2: Cook the Vegetables
Turn your 6-quart Instant Pot to sauté mode.
Add the remaining 2 tablespoons of butter and melt it. Then add:
Chopped onion
Celery
Carrots
A pinch of salt
Cook for about 3–4 minutes, stirring occasionally, until the vegetables soften.
Add the minced garlic and cook for another 2–3 minutes until fragrant.
Step 3: Build the Broth
Stir in:
Fresh thyme
The remaining 2 tablespoons flour
Cook for about 1 minute, stirring well to form a light roux.
Then pour in:
Chicken stock
White wine
Stir to combine.
Add the chicken pieces, frozen peas, 1½ teaspoons salt, and several grinds of black pepper. Turn off the sauté function.
Step 4: Add the Dumplings
Scoop the prepared dough into 2-tablespoon portions and gently drop them into the liquid.
Space them evenly across the pot. You should have about nine dumplings.
Step 5: Pressure Cook
Lock the lid according to your Instant Pot instructions and set it to:
High pressure for 3 minutes.
Once the cooking cycle ends, perform a quick pressure release and carefully remove the lid.
The dumplings will be fluffy and cooked through while the broth thickens into a comforting stew.
Step 6: Serve
Spoon the chicken, vegetables, broth, and dumplings into bowls. Sprinkle with fresh parsley for a bright finish.
