Creamy Lemon and Broccoli Soup Recipe for a Nutritious Boost

Ingredients
50g butter
2 cloves garlic, crushed
500ml vegetable stock
100ml fresh cream
1 tbsp sea salt (adjust to taste)
80g ricotta cheese
1 leek, sliced, washed, and dried
1 medium head of broccoli, chopped
100g spinach leaves
15ml lemon juice (about 1 tbsp)
4 dashes black pepper
Instructions
Step 1: Sauté the Leek and Garlic
In a deep saucepan over medium-high heat, melt the butter. Add the sliced leek and crushed garlic, stirring continuously for about 5 minutes, until the leek softens and turns tender.
Step 2: Add Broccoli and Cook
Add the chopped broccoli and vegetable stock to the pan. Bring to a boil, then reduce the heat and simmer for 8-10 minutes until the broccoli is tender. Add the spinach and cook for another 1-2 minutes until just wilted.
Step 3: Blend and Finish
Using an immersion blender (or a regular blender in batches), blend the soup until smooth. Stir in the fresh cream, lemon juice, sea salt, and black pepper, mixing well to combine.
Step 4: Serve and Garnish
Ladle the soup into bowls, top with a dollop of ricotta cheese, and add an extra dash of black pepper if desired. Serve hot and enjoy!
