  • 1/2 teaspoon ground nutmeg

  • 1 1/2 pounds cooked lobster meat, chopped

  • 1 1/2 cups fresh white bread crumbs (from about 5 slices, crusts removed)

Step-by-Step Instructions

  2. Cook the Pasta:
Add the macaroni to the boiling water and cook according to the package instructions usually 6 to 8 minutes until al dente. Drain well and set aside.

  3. Make the Cheese Sauce:
In a small saucepan, heat the milk gently do not let it boil. In a separate large pot, melt 6 tablespoons of butter over low heat. Whisk in the flour and cook for 2 minutes, stirring constantly to form a smooth roux. Slowly whisk in the warm milk and cook for 1 to 2 more minutes, until the mixture thickens into a creamy sauce.

  4. Add the Cheese & Seasoning:
Off the heat, stir in the Gruyère, Cheddar, 1 tablespoon of salt, pepper, and nutmeg until melted and fully combined.

  5. Combine Pasta and Lobster:
Gently fold the cooked macaroni and chopped lobster meat into the cheese sauce. Mix until everything is evenly coated.

  6. Assemble the Dish:
Spoon the mixture into 6 to 8 individual gratin dishes or one large baking dish.

  7. Top and Bake:
Melt the remaining 2 tablespoons of butter and toss with the bread crumbs. Sprinkle evenly over the top of the mac and cheese. Bake for 30 to 35 minutes, until the sauce is bubbling and the top is golden brown.

Tips for Success

  • Fresh lobster will elevate the flavor, but you can use frozen if needed just thaw and pat dry before adding.

  • Want a smokier taste? Try swapping in a smoked Cheddar or adding a dash of paprika to the cheese sauce.

  • No gratin dishes? A 9x13-inch baking dish works just fine.
