Memphis-Style Dry Rub Ribs

When it comes to ribs, Memphis-style dry rub is a classic for a reason. Packed with flavor from a perfectly balanced spice blend, these ribs are tender, juicy, and crispy all without needing a grill or smoker. With this simple recipe, you can make fall-off-the-bone delicious ribs right in your oven.
Ingredients
For the Rub:
2 tbsp paprika
1 tbsp brown sugar
1 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp ground cumin
1 tsp black pepper
1 tsp salt
1/2 tsp cayenne pepper (optional for heat)
For the Ribs:
2 racks of baby back ribs (about 4 lbs)
2 tbsp vegetable oil
Instructions
Step 1: Preheat the Oven
Preheat your oven to 300°F (150°C). Line a large baking sheet with aluminum foil for easy cleanup.
Step 2: Prepare the Rub
In a small bowl, mix all the rub ingredients until well combined.
Step 3: Prepare the Ribs
Place the ribs on a cutting board, bone-side up. Remove the thin membrane on the underside by sliding a knife under the edge and pulling it off with a paper towel for better grip.
Rub the vegetable oil onto both sides of the ribs.
Sprinkle the rub generously over the ribs, working it in evenly and thoroughly.
Step 4: Bake the Ribs
Place the ribs on the prepared baking sheet, meat-side up.
Bake in the oven for 2 to 2 1/2 hours, or until the meat is tender and begins to pull away from the bones.
Step 5: Rest and Serve
Remove the ribs from the oven and let them rest for 5–10 minutes before slicing. Serve as-is or with your favorite barbecue sauce on the side for dipping.
Tips for Perfect Ribs
Add Smoke Flavor: For a smoky twist, include 1 tsp of smoked paprika in the rub.
Crispier Texture: Finish the ribs under the broiler for 2–3 minutes to crisp up the surface.
Pairings: Serve with coleslaw, baked beans, or cornbread for a full Memphis-style feast.
