8 large eggs
½ cup whole milk
½ teaspoon freshly ground black pepper
¼ teaspoon salt
4 ounces thinly sliced ham, chopped
⅓ cup freshly grated Parmesan cheese
2 tablespoons chopped fresh Italian parsley
Instructions
Preheat the oven to 375°F (190°C).
Spray two 24-cup mini muffin tins with nonstick cooking spray.
In a large bowl, whisk together the eggs, milk, salt, and pepper until smooth.
Stir in the chopped ham, Parmesan, and parsley.
Carefully spoon the egg mixture into each muffin cup, filling almost to the top.
Bake for 8–10 minutes, or until the frittatas are puffed and just set in the center.
