Ingredients

  • 1 ounce dried porcini mushrooms

  • 8 ounces white button mushrooms, quartered

  • ½ cup walnuts, toasted

  • 2 garlic cloves

  • 1½ cups fresh Italian parsley leaves

  • ¾ cup olive oil, divided

  • ½ cup freshly grated Parmesan

  • Salt and freshly ground black pepper

  • 36 slices of baguette (½-inch thick)

Instructions

Make the Mushroom Pesto

  1. Soak the porcini mushrooms in a bowl of hot water for about 15 minutes until tender. Drain carefully, avoiding any grit at the bottom.

  2. In a food processor, pulse the porcini mushrooms, button mushrooms, walnuts, garlic, and parsley until coarsely chopped.

  3. With the processor running, gradually add ½ cup olive oil, blending until the mixture is finely chopped.

  4. Transfer to a bowl and stir in the Parmesan. Season with salt and black pepper to taste. Cover tightly with plastic wrap if not using immediately.

Prepare the Crostini

Grill Method:

  • Preheat a grill pan over medium-high heat.

  • Arrange the baguette slices cut-side down and brush with ¼ cup olive oil.

  • Grill for about 5 minutes, until golden and crisp.

Oven Method:

  • Preheat the oven to 375°F.

  • Arrange the bread slices on two baking sheets and brush with ¼ cup olive oil.

  • Bake for about 15 minutes, until lightly golden and crisp.

Assemble and Serve

  • Spread a generous layer of mushroom pesto over each crostini.

  • Arrange on a serving platter and enjoy immediately!
