Mushroom Pesto Crostini Recipe for an Elegant Appetizer

Ingredients
- 1 ounce dried porcini mushrooms 
- 8 ounces white button mushrooms, quartered 
- ½ cup walnuts, toasted 
- 2 garlic cloves 
- 1½ cups fresh Italian parsley leaves 
- ¾ cup olive oil, divided 
- ½ cup freshly grated Parmesan 
- Salt and freshly ground black pepper 
- 36 slices of baguette (½-inch thick) 
Instructions
Make the Mushroom Pesto
- Soak the porcini mushrooms in a bowl of hot water for about 15 minutes until tender. Drain carefully, avoiding any grit at the bottom. 
- In a food processor, pulse the porcini mushrooms, button mushrooms, walnuts, garlic, and parsley until coarsely chopped. 
- With the processor running, gradually add ½ cup olive oil, blending until the mixture is finely chopped. 
- Transfer to a bowl and stir in the Parmesan. Season with salt and black pepper to taste. Cover tightly with plastic wrap if not using immediately. 
Prepare the Crostini
Grill Method:
- Preheat a grill pan over medium-high heat. 
- Arrange the baguette slices cut-side down and brush with ¼ cup olive oil. 
- Grill for about 5 minutes, until golden and crisp. 
Oven Method:
- Preheat the oven to 375°F. 
- Arrange the bread slices on two baking sheets and brush with ¼ cup olive oil. 
- Bake for about 15 minutes, until lightly golden and crisp. 
Assemble and Serve
- Spread a generous layer of mushroom pesto over each crostini. 
- Arrange on a serving platter and enjoy immediately!
