Instructions

  1. Cook the rice:
    In a medium nonstick saucepan, melt half the butter over medium-low heat. Add the rice and cook, stirring often, until golden about 6 to 7 minutes.

  2. Simmer:
    Pour in the chicken stock and stir in the salt. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 20–25 minutes, or until the rice is tender and all the liquid has been absorbed. Remove from heat and let sit, covered, for 5 minutes.

  3. Sauté the shrimp:
    In a large skillet, melt the remaining butter over medium heat. Add the garlic and cook for 1 to 2 minutes, just until fragrant.

  4. Add shrimp and sauce:
    Stir in the shrimp, lemon juice, and hot sauce. Cook for 2 to 3 minutes, or until the shrimp are pink and fully cooked.

  5. Finish with cream:
    Stir in the whipping cream and heat through. Season to taste with salt and freshly ground black pepper.

  6. Assemble and serve:
    Fluff the cooked rice with a fork and spread it on a serving platter. Spoon the shrimp and cream sauce over the rice and serve warm.
