Rib Eye Steak with Onion Blue Cheese Sauce for a Decadent Dinner

A perfectly cooked rib eye steak is already a treat, but adding a creamy onion and blue cheese sauce takes it to another level. This indulgent recipe pairs the bold flavors of Worcestershire sauce, caramelized onions, and tangy blue cheese with a tender, juicy steak for a restaurant-quality meal at home.

Ingredients

  • 4 rib eye steaks (5 ounces each)

  • Salt and freshly ground black pepper

  • 1 stick (½ cup) butter, softened

  • 1 large yellow onion, sliced

  • 1 cup heavy cream

  • 3 to 4 tablespoons Worcestershire sauce

  • ¾ cup crumbled blue cheese

Directions

  1. Preheat the Grill

    • Heat your grill to high or prepare a hot outdoor grill. (You can also cook the steaks in a skillet over medium-high heat.)

  2. Season the Steaks

    • Sprinkle the steaks with salt and black pepper.

    • Spread ½ stick of butter on both sides of the steaks.

  3. Grill the Steaks

    • Cook for 3 to 4 minutes per side until medium-rare.

    • Remove from heat and keep warm.

  4. Prepare the Blue Cheese Sauce

    • Melt the remaining ½ stick of butter in a large skillet over medium-high heat.

    • Add the sliced onions and sauté until golden brown, about 7 to 8 minutes.

    • Pour in the heavy cream, a dash of salt and pepper, and the Worcestershire sauce.

    • Let the mixture bubble, then stir in the blue cheese until melted and smooth.

    • Adjust seasoning with extra Worcestershire sauce or black pepper if desired.

  5. Serve and Enjoy

    • Plate the steaks and spoon the sauce generously over the top.

    • Serve with roasted vegetables, mashed potatoes, or a crisp green salad.
