2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
Instructions
Step 1: Wash and Prep the Vegetables
Wash all the vegetables thoroughly and pat them dry to remove excess water. On a chopping board, slice the bell peppers, capsicum, zucchini, tomatoes, potatoes, and onion into evenly sized pieces. Arrange the vegetables on a baking tray in a single layer for even roasting.
