Ingredients

  • 1 1/2 tbsp ginger paste

  • 1 stalk curry leaves

  • 1 pinch salt

  • 1/4 tsp black pepper powder

  • 4 green chilies, chopped

  • 2 onions, finely chopped

  • 1 red chili, whole

  • 1 1/2 tsp soy sauce

  • 1 1/2 tsp vinegar

  • 1/2 cup refined oil (for frying)

  • Water as needed

Instructions

Step 1: Prepare the Batter

In a mixing bowl, combine the all-purpose flour and cornflour with a pinch of salt. Gradually add water, stirring to create a smooth batter. Add vinegar and soy sauce for a tangy flavor boost, and set aside.

Step 2: Sauté Aromatics and Add to Batter

In a pan, heat a small amount of oil over medium flame. Add the ginger and garlic paste, followed by chopped green chilies, black pepper powder, onions, whole red chili, and curry leaves. Sauté until fragrant and slightly golden, then remove from heat. Stir this aromatic mixture into the batter, mixing well to ensure even flavor.

Step 3: Coat and Fry the Paneer

Heat enough oil in a deep pan for frying. Dip each paneer finger into the prepared batter, ensuring it’s well coated. Carefully drop the paneer fingers into the hot oil and fry until they’re crispy and golden brown. Remove with a slotted spoon, allowing excess oil to drain.

Step 4: Serve Hot
