Classic Sea Bass alla Fiorentina Delight

Ingredients

  • 4 (6-ounce) pieces of sea bass

  • 1/4 teaspoon salt, plus extra for seasoning

  • 1/2 teaspoon freshly ground black pepper, plus extra for seasoning

  • 2 cups all-purpose flour

  • 3 tablespoons extra-virgin olive oil, plus 3 tablespoons

  • 3 garlic cloves, chopped

  • 1 (14-ounce) can crushed tomatoes

  • 1/2 cup water

  • 1 tablespoon chopped fresh parsley leaves

  • 1 tablespoon chopped fresh basil leaves

Directions

  1. Prepare the Fish:

    • Season both sides of the sea bass with salt and pepper.

    • Place flour in a shallow bowl and lightly dredge the fish, tapping off any excess to create a thin, even coating.

  2. Pan-Sear the Fish:

    • In a medium nonstick skillet, heat 3 tablespoons of olive oil over medium heat.

    • Cook the fish for about 3 minutes per side, until golden brown. Transfer to a plate and set aside.

  3. Make the Sauce:

    • Wipe out the pan with a paper towel. Add the remaining 3 tablespoons of olive oil over medium heat.

    • Stir in garlic, crushed tomatoes, water, parsley, 1/4 teaspoon salt, and 1/2 teaspoon pepper.

    • Simmer for 10 minutes to allow the flavors to meld.

  4. Finish and Serve:

    • Add the basil and return the fish to the pan. Heat for 2 minutes to warm through.

    • Serve immediately with crusty bread, pasta, or a side of sautéed greens.
