Classic Sea Bass alla Fiorentina Delight

Sea Bass alla Fiorentina is a flavorful Italian-style dish that combines lightly pan-seared fish with a vibrant tomato and herb sauce. This recipe is quick to prepare, making it perfect for a weeknight meal while still feeling elegant enough for entertaining.
Ingredients
- 4 (6-ounce) pieces of sea bass 
- 1/4 teaspoon salt, plus extra for seasoning 
- 1/2 teaspoon freshly ground black pepper, plus extra for seasoning 
- 2 cups all-purpose flour 
- 3 tablespoons extra-virgin olive oil, plus 3 tablespoons 
- 3 garlic cloves, chopped 
- 1 (14-ounce) can crushed tomatoes 
- 1/2 cup water 
- 1 tablespoon chopped fresh parsley leaves 
- 1 tablespoon chopped fresh basil leaves 
Directions
- Prepare the Fish: - Season both sides of the sea bass with salt and pepper. 
- Place flour in a shallow bowl and lightly dredge the fish, tapping off any excess to create a thin, even coating. 
 
- Pan-Sear the Fish: - In a medium nonstick skillet, heat 3 tablespoons of olive oil over medium heat. 
- Cook the fish for about 3 minutes per side, until golden brown. Transfer to a plate and set aside. 
 
- Make the Sauce: - Wipe out the pan with a paper towel. Add the remaining 3 tablespoons of olive oil over medium heat. 
- Stir in garlic, crushed tomatoes, water, parsley, 1/4 teaspoon salt, and 1/2 teaspoon pepper. 
- Simmer for 10 minutes to allow the flavors to meld. 
 
- Finish and Serve: - Add the basil and return the fish to the pan. Heat for 2 minutes to warm through. 
- Serve immediately with crusty bread, pasta, or a side of sautéed greens. 
 
Cooking Tips
- For a lighter option, you can skip the flour dredging and simply sear the fish with olive oil, salt, and pepper. 
- Use fresh, ripe tomatoes if available for a fresher sauce flavor. 
- Pair with a crisp white wine like Pinot Grigio or Sauvignon Blanc for a classic Italian experience.
