Savory Smothered Pork Chops for a Comforting Meal

Ingredients
1 cup all-purpose flour
2 tablespoons onion powder
2 tablespoons garlic powder
1 teaspoon cayenne
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 pork chops (3/4-inch thick, bone-in)
1/4 cup olive oil
1 cup chicken broth
1/2 cup buttermilk
Chopped fresh flat-leaf parsley, for garnish
Directions
Prepare the Flour Mixture
In a shallow platter, combine the flour, onion powder, garlic powder, cayenne, salt, and black pepper. Mix well with a fork to ensure even distribution.
Dredge the Pork Chops
Pat the pork chops dry with paper towels to remove any moisture. Coat each pork chop in the seasoned flour, shaking off the excess.
Sear the Pork Chops
Heat a large sauté pan or cast iron skillet over medium heat. Add the olive oil and allow it to heat until shimmering.
Place the pork chops in the pan in a single layer and fry for 3 minutes on each side, or until golden brown. Remove the pork chops from the pan and set aside.
Make the Gravy
Sprinkle a small amount of the leftover seasoned flour into the pan drippings and stir to combine. Cook for 1 minute to eliminate the raw flour taste.
Gradually pour in the chicken broth while stirring to create a smooth sauce. Cook for 5 minutes, allowing the liquid to reduce and thicken slightly.
Add the Buttermilk
Stir in the buttermilk to create a creamy, rich gravy.
Simmer the Pork Chops
Return the pork chops to the pan, spooning the sauce over them. Simmer for 5 minutes, or until the pork chops are fully cooked.
Season and Serve
Taste the gravy and adjust the seasoning with salt and pepper, if needed. Garnish with chopped parsley before serving.
