  • 5 to 6 large shallots, chopped

  • 3 medium carrots, cut into ½-inch pieces (about 1⅓ cups)

  • 1 large red bell pepper, cut into ½-inch pieces (about 1½ cups)

  • 8 ounces ground white turkey meat, broken into small chunks

  • 1 tablespoon herbes de Provence

  • 4 cups low-sodium chicken broth (plus more as needed)

  • 1 (15-ounce) can diced tomatoes in juice, drained

  • 1 cup cooked brown rice

  • 1 small bunch kale, coarsely chopped (about 4 packed cups)

  • 1 teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper

  • ¼ cup chopped fresh flat-leaf parsley

  • ¼ cup freshly grated Parmesan (optional)

Directions

  1. Sauté the Vegetables

    • Heat olive oil in a large pot over medium-high heat.

    • Add shallots, carrots, and bell pepper. Sauté, stirring frequently, until vegetables soften and begin to brown (about 8-10 minutes).

  2. Cook the Turkey

    • Add ground turkey to the pot, stirring until it turns white and lightly browns at the edges (5-7 minutes).

  3. Add Flavor and Simmer

    • Stir in herbes de Provence and cook for another minute.

    • Pour in chicken broth, drained tomatoes, and cooked brown rice. Bring to a boil.

  4. Incorporate Kale

    • Stir in chopped kale, season with salt and black pepper, then reduce heat to medium-low.

    • Cover and simmer until vegetables are tender (about 15 minutes).

  5. Serve and Garnish

    • Taste and adjust seasoning as needed.

    • Ladle into bowls, garnish with fresh parsley and Parmesan if desired, and enjoy!
