Almonds are a favorite among nutrition experts due to their high fiber content (more than peanuts and cashews combined) and being a good source of plant-based protein. Yields 12 servings

Ingredients: 1 cup roasted almonds 1 cup dried blueberries 1 cup pitted dried dates

  1. Preheat oven to 375° F. Spread almonds on a baking sheet and bake for about 10 minutes, until slightly toasted and aromatic. Be careful not to overcook them.
  2. Allow almonds to cool, then place them in a food processor or high-powered blender along with the dried blueberries and dates.
  3. Pulse the mixture to break everything apart. Blend for 15-20 seconds, using a tamper if necessary, to press down on the ingredients. Continue pulsing and blending until the mixture forms a ball.
  4. Empty the mixture onto wax or parchment paper. Press it down with your hands to form an eight-by-eight-inch square. Wrap or secure the mixture with the paper and refrigerate for about an hour.
  5. Remove from the fridge and cut into 12 smaller squares. Store in a container and refrigerate for up to three weeks.
